Jackfruit / Chakka Payam

The jackfruit (Artocarpus heterophyllus), family (Moraceae). It's exotic fruit native to southern India, grow now another parts of the world like Bangladesh, Sri Lanka and the rain forests area of the Philippines, Indonesia, and Malaysia. Jackfruit is mainly used in South and Southeast Asian cuisines. Jackfruit use prepare different varieties, all are different taste. Both ripe and unripe fruits are consumed. it is a big fruit and give lots of health benefits. 

Jackfruit Tree / Plavu

Jack tree is very height. Normally matured tree attain 15 to 24 metres height. some varieties are short plant. today budded or grafted plants are available. this are get fast result in short period. tree only have short tree. Jack tree malayalees call "plavu". The tree decorated with green leaf this riped leaves are change colour green to orange. The word jackfruit name comes from Portuguese . Malayalam language known "chakka" or 'chakka pazham", English name is "Jackfruit".

Jackfruit outside portion decorated with thorn so, care. Outside green to light yellow colour. inner portion pulp (chakka chula) is yellow colour some fruit light orange colour. this fruit are very sweet and tasty. mainly two types jackfruit. one, very soft not need knife for this cutting process can do with hand. then one light hard more than soft jackfruit. malayalees two types are called "pazham chakka" "varikka chakka". other some varities are known with place like Malaysian jackfruit.

Riped and unripe fruits are useful. jackfruit use prepare diffrent varities. contain lots of nutrients and health benefits. a matured Normal jack tree produces some 100 to 150 fruits per year. The ripe fruit is sweet (depending on variety) and is more often used for desserts.

Jack fruit eating process is very different. When you are ready to cut must care. ripe jackfruit are very tasty. Jackfruit outside Portion decorated with thorn but not over sharp. wash until clean. take knife apply oil for to prevent staining (Malayalam name valanheen) then cut centre portion.

How to store Jackfruit

It is a big fruit so, must know about store procedure. Take fruit from pod then clean all portion change in to air tight container or wrap use tightly close. In Refrigerator upto 1 weak will remain undamaged after days change smell and taste. in freezer it keep upto 2 or 3 month. Fried jackfruit will remain is long time. Fried jackfruit use with bakery items.

It is a super healthy food. some varieties are Chakka puzhukk, chakka varatti, fried jackfruit, payasam, chakka kumbil. chakka use different snacks, chakka unniyappam, chakka halwa, chakka cacke, jackfruit seed curry.
     
Jackfruit use have more and more tasty recipes. Malayalees know more dishes use Jackfruit. All dishes are variety. some dishes method are described below;

Chakka puzhukk

Very tasty recipe use unripe jackfruit.

Ingredients:

  • Peeled jackfruit -10 pcs
  • Coconut - 1/2 cup grated
  • Curry leaves - 10
  • Salt for taste
  • Turmeric powder - 1tsp
  • Green chilli - 6nos
  • Garlic - 2
  • Cumin seeds - 1/2tsp
  • Coconut oil - 4tsp
  • Mustard - 1tsp

Method

  • Remove Jackfruit ( chakka chula)  seed and flowers (chakka chavini) and chakkakuru). Clean then slice the jackfruit small pieces.
  • take pressure cooker or any other cooking kadai put into all jackfruit pieces and add salt ,turmeric powder, one cup of water and stir well. close pressure cooker on medium flame, wait for one vessel.
  • in this time take mixi put coconut, green chilli, cumin seeds, shallots, garlic, curry leaves and add some water. crush all together.
  • pressure cooker open stir well.
  • take kadai pour oil heat time add mustard. then add jackfruit and crushed  mixture stir well for mixing all ingredients. after 5 minute flame off. this  item With chattini, chammanthi, unakkameen all are super combination.

Chakka Varatti

Yummy chakkavaratty using ripe jackfruit. all ingredients are your needs.

Ingredients:

  • Jackfruit
  • Ghee
  • Jaggery

Method

  1. Take some water and put jaggery. wait for dissolve and thick consistency. stir well and keep aside
  2. Take jackfruit put into mixi no need water roughly crush. if you need cut this stage
  3. you can get a paste consistency
  4. flame one take kadai. pour strained Jaggery syrup stir until thick
  5. add jack fruit paste into kadai. Stir well use your whisk. boil time change to low flame
  6. it will splutter so be a distance
  7. remove moisture in the kadai after 10 minutes. this time feel more thick. keep mixing
  8. now, add ghee in intervels. Feel a rollable form consistency then flame off wait for cool, now ready enjoy chakkavaratty.
